Pralined Pecans

2 lbs. pecan halves
1 egg white  
1 tsp. water  
1 cup sugar  
1 tsp. cinnamon  
1/2 tsp. salt  
1 tsp. cocoa

Preheat oven to 325 degrees.
Beat egg whites and water together. Stir in pecans and toss
Mix together sugar, cinnamon, salt and cocoa. Pour over pecans and toss
Pour pecans into a greased baking pan.

Bake 45 minutes, stirring every 10 minutes.
Using spatula, loosen pecans immediately from the. Cool and store up to two weeks in an airtight container, or put into a pretty glass jar with a bow to give as a holiday gift.  

Honey Glazed Pecans

2 C. PECAN HALVES
2 TBLS HONEY
1/2 TEASPOON SALT
1/4 TEASPOON GARLIC POWDER

Put the pecans into a large bowl, and add 2 tablespoons of honey, stirring it into the nuts making sure they are all completely coated. Sprinkle 1/2 teaspoon of salt and 1/4 teaspoon of garlic powder over them, and mix together well to completely coat the pecans.

Pour the pecans onto a foil covered baking sheet and roast them in the oven at 350 degrees for about 15 minutes, stirring occasionally. Let cool and store in an air-tight container or glass jar.  

Mamie's Maraschino Rum Balls

Makes about 3 dozen
 
2 cups finely crushed vanilla wafers- about 4 dozen
1 cup confectioner's sugar
1/2 cup finely chopped maraschino cherries
1 cup finely chopped pecans
1/4 dark rum
3 tablespoons dark corn syrup
2 tablespoons melted sweet butter (unsalted)
1/4 cup confectioner's sugar for rolling

In medium bowl, combine crushed wafers, confectioner's sugar, cherries and pecans. Add rum, corn syrup and butter, and blend well. 

Shape into 1 inch balls. Roll in the 1/4 cup powdered sugar. 

Cover tightly; let sit 24 hours for flavors to blend before serving. These make a great gift – just put the rum balls into a pretty christmas tin or colored glass jar and decorate it.

Sesame Seed Candy

1 ½ cups sesame seeds
1 lb brown sugar
2 tablespoons butter
½ cup milk
1 tsp vanilla

Boil sugar with milk until it begins to thread when a drop is added to the back of a metal spoon. Remove from heat and beat in sesame seeds. Add vanilla and beat until creamy. Pour and spread out onto a buttered pan and cut into squares
