Peanut Butter Bread

Ingredients:

2 cups of white flour
1/3 cup of sugar
2 teaspoon of baking powder
1/4 teaspoon of salt
3/4 cup of smooth peanut butter
1 cup of milk
1 egg, beaten

Grease a loaf pan and preheat oven to 350. In a large bowl mix together the flour, baking powder, sugar and salt. Next add to the dry ingredients the peanut butter, egg, and the milk and mix until well blended. Put the batter into the loaf pan and bake for 50-55 minutes. Cool on a wire rack.  

Carolina Country Hobo Bread

Ingredients:

1 1/2 cups of raisins
2 teaspoons of baking soda
1 cup of boiling water
1 cup of sugar
1/2 cup of chopped nuts
3 tablespoons of shortening
1 egg, beaten
2 cups of flour
1/8 teaspoon of salt

Pour the boiling water over the raisins and baking soda and let stand until cool.  Combine the other ingredients with the raisin mixture and bake in a greased loaf pan at 350 degrees for 60 minutes or until done.

Down Home Biscuits

Ingredients:
3 cups all-purpose flour
1 tablespoon plus two teaspoons baking powder
2 Tablespoons sugar
1/2 teaspoon salt
1 teaspoon cream of tartar
1 cup butter (sweet,unsalted)
1 extra large egg, lightly beaten
1 cup milk

Instructions:

In a bowl, combine the flour, baking powder, sugar, salt and cream of tartar.

Cut in butter until mixture resembles coarse cornmeal.
Add the milk and egg, stirring until all ingredients are well blended Knead lightly on a floured surface.
Roll out to 1 inch thick. Cut into 2 or 3 inch biscuits using a cookie cutter or a glass.
Place on a greased pan or in a 10-inch iron skillet
Bake at 450 degrees for 12 to 15 minutes.

To reheat leftover biscuits - sprinkle a little cold water on the biscuits, place in a brown paper bag and heat in a 350 degree oven for 10 minutes.

Mamie's Banana Nut Bread

3 medium sized ripe bananas (where the skin has a lot of black and they're too soft to use for anything else!) - mashed
1 tblsp. butter, softened at room temperature
1 c. honey
2 eggs
2 c flour
1/2 tsp salt
1 tsp baking soda
1/2 cup chopped walnuts

Butter and flour a loaf pan. 
Combine bananas, honey, eggs, and butter and mix well. Toss together the flour, baking soda and salt. 
Add to your banana mixture and blend thoroughly
Add the chopped walnuts and mix in well
Bake at 350 degrees for about 45 minutes or until a toothpick or metal skewer comes out of the center squeaky clean.
